The problem with your services being purchased and the customer not submitting information is that you offer a writing service. I offer the same services, and I know we are stuck without the user submitting their information. We can't assume we know what they want, we can't waste our time writing up something and hoping they accept it, but what you can do is write a short 2-3 sentence paragraph asking them for their information and submitting it as the order is completed.
Write something along the lines of (or use this exactly)
If you go about it this way, you'll be taken as a professional, you won't have a late order, and the buyer will gladly work with you later on if they need something else written up

This is because a first-time buyer might not know they have to submit their information to get the job done, and they assume you know (Yeah, not a good reason on their part), but it does happen. Seasoned buyers, people who purchase dozens of services each day, tend to forget sometimes because they'll have multiple tabs open, submitting information, and they could close something they thought was finished, but it needed some additional input.
