Just hide them with CSS.. Or if you are talking about SEO, do not change anything, but create a short description and use it if only the category is empty! ;)

if your categories doesn't have any product then just written as currently there is no item found in the searching categories.

I agree that you can hide the category in question. Usually, a business website is designed to hold a complete list of services or products. And when one in the list is not present then the menu is still complete. What you can do in case of an absence in the product is to place a note that the product is not available for the moment. You can also add when the product will be available so the potential client will be fully guided.

If your site does not contain any product or content, it is really hard to optimize your site. You can use keywords on the site title and site description. Apart from this, there is no other chances for SEO on a blank site. However, if your site contains products, you can use keywords in the product title, image and description. This can make your product visible on the search engine.

If the site has no product to speak of then it is not considered an e-commerce site anymore because there is practically no commerce at all. My take is the unavailable products that are in the list and you can put an asterisk before the product’s name to indicate something like if it is not available at the moment or if the products has a discount.

You are right. If there are no products to sell, how can it be an ecommerce site. For a legit ecommerce site, there needs something to sell. However, if you are just starting our and do not have any products to sell, you can still optimize your site. You can use the primary and secondary keywords for your website title and description. You can also use keywords on your your site pages and blog sections.
