You can always take a break from the forum, unless that is your only job. Most likely you will have other ways to manage the stress offline such as exercise, yoga or watching television.

Don't take things so personally on your forum. If you need a day off, then take it. Just let your admin know you will be unavailable to answer questions or tend to other forum matters. Don't leave your staff out of the loop on the situation or there could be desertions.

Take some deep breaths and then come back to it later. Often times a clear head will help you solve way more.

Sometimes, taking a step back from a bad sitaution, like you suggested, is a good way to resist pressure to act quickly. Impulsive and hastily made decisions can lead to mistakes.

Maybe you should just get rid of your source of stress. If a member is making a big fuss or trolling, then suspend them till they learn to behave.

I would create a forum more for the enjoyment so if my job as admin of my forum becomes stressful, I would either hire someone to be admin or close down the forum. A stressful task takes away the enjoyment so my purpose in putting up my forum is defeated. But on second thought, if my forum is earning a lot of money for me then I guess the stress is just worth it.
