And you are correct when you say to just highlight a few of your keywords using the strong tag in order for them to stand out. So many times I've seen someone just bold an entire sentence or even bold every single keyword in their post or page that they are trying to rank for. Google, Yahoo! and Bing will understand what your page is about, you don't have to bold or italicize everything lol
Back to header tags though. Some people use them for just a keyword which is sometimes bad since it doesn't describe what the following text is about to go over. Sure, get a keyword in the header tag but make sure it explains something. Think of the header tag as something that should go around a title and then follow it up with a good description which also has your keywords in it. This way you'll be giving a decent one two punch to Google and basically saying "Yo, I did this right now rank me up!" lol
Also, it's not an overnight type of thing. Optimizing your pages correctly will just put you on an even playing field with your tough competition. Be sure to do everything right in order to rank up properly and make Google, Yahoo! and Bing send you that targeted traffic you deserve Header tags definitely help with rankings in Google, Yahoo! and Bing.
